The Mixing Room by Iron Fairies, an enigmatic creative cocktail space hidden away off Hollywood Road in Central, has come to life this October. This intriguing cocktail divan promises a bewitching night of innovative and exceptional mixology amidst other worldly interiors that captivate and invigorate imaginations.
 
Designed by award-winning acclaimed Australian designer Ashley Sutton, who has exported his enchanted den of magic and mystery globally, The Mixing Room takes its inspiration from Sutton's own experience in the iron ore mines of Western Australia as well as from his own children's book trilogy about a band of grumpy miners trapped underground and tasked with forging iron fairies from the ore. As a genesis concept to Sutton's acclaimed Iron Fairies bars, the new venue focuses on the chapter where the miners refer to their "Fairy Casting Formula Book" to create the mystical fairies.
 
Running as an independent space from the adjacent Iron Fairies, The Mixing Room is a magical den that combines a magical and intimate vibe with intriguing cocktails and intelligent service that will satisfy the city's curious and adventurous palates.
 
Furnished in raw iron, hand-hewn timber, and soft, supple and tufted leather, the space caters for 60 guests. A wonderland of industrial textures straight from the pages of a fairy tale, guests can expect hand-made custom furnishings, low-slung ceilings, and brick textured walls adorned with over 22,000 jars and bottles containing fairy dust, poems and all sorts of mysterious ingredients, with which the band of grumpy miners forge their iron fairies, only to become bewitched when the troupe of mischievous fairies come alive and cast a spell over them.
 
Guests can enjoy a range of modern, storybook-inspired cocktails at the rustic, hand-crafted wooden tables, which have been matched with curvy banquette seating that seamlessly runs the entire length of the space. The Mixing Room's striking cocktail bar is made of dark timber with an iron bar top and is wreathed with brown-leather bar stools. Here, the mixologist team adds a theatrical touch to the captivating space.
 
Storybook-inspired Modern Cocktails

At The Mixing Room, the cocktail program is serious business. Modern and creative, the enchanting debut cocktail program is inspired by the characters from Sutton's children's book trilogy. These visually striking and Insta-perfect cocktails are laced with homemade sodas, house infusions, and craft spirits, all of which have been crafted with precision and passion.

Mouna's Escape is a refreshing Bellini-inspired concoction with a hint of sweetness. It is made with apple brandy and watermelon cordial and topped with sparkling wine. Alternatively, opt for the non-alcoholic version (HK$100), made with corn and white chocolate hydrosol, watermelon cordial and alcohol-free sparkling Chardonnay. It is inspired by the naughty blue fairy, Mouna, who has a cheeky, intelligent and extremely naughty personality that inspires her to attempt escape occasionally.

Raine in the Gumtree, inspired by Raine, one of the iron fairies with dragon-fly wings, who is playful in nature, this Old-Fashioned offers a cheeky twist on the classic, mixing Glenmorangie X malt whiskey, rum, cognac, bitters and fish sauce-infused caramel - think salted caramel with a touch of funkiness.

Inspired by Fat Guts, the man behind each delicately crafted fairy wing, the Fat Guts Martini is a twist on the classic savoury martini and is served stirred. Made with Four Pillars Rare Dry Gin, Peddlers Gin, Umami Sake, parmesan-infused spirit, and a hint of basil oil, it is garnished with a lemon twist, an olive, and a caper berry on the side. Guests can also expect a combination of botanical fragrances delivered by Yunnan almonds, Sichuan peppers, and Gansu lotus flowers thanks to the use of Peddlers Rare Eastern craft-gin from China. This elegant, savoury elixir is served alongside a bump of Acipenser Baerii caviar for a sense of luxury and an in-depth flavour.

Jilo the Bastard, inspired by the grumpy miner of the same name, is a Manhattan-style cocktail made with a collection of Australian ingredients to reference Ashley Sutton's heritage. These include Gospel Solera Rye whiskey, sherry, barrel-aged rum, and house-infused vermouth, which is combined with distilled banana and Garam Marsala spices and finished with a spray of catnip essence.

The Golden Fairy named for the final fairy cast by the miners, a refreshing and sour-style cocktail that pays tribute to the classic Margarita. It features tequila, Cocchi Americano aromatized wine, Ancho Reyes chilli liqueur, mezcal, and house-made sage syrup and is garnished with a sage leaf.

The milk punch-inspired cocktail, A Cheeky Mango is a clarified "milk punch" with a velvety texture and is made with gin, Marsala wine, milk, mango puree, lime puree, and agave syrup.

About Ashley Sutton

Award-winning Australian designer Ashley Sutton is known as the legend of Asia nightlife and is among the most successful and in-demand designers for bars and clubs. Originally from Fremantle, in Western Australia, the prolific interior designer has made a name for himself in Bangkok, Hong Kong and Tokyo and is intent on conquering the world.

At 14, he dropped out of school and apprenticed in a medieval stained-glass factory. In his early days working in mining, Sutton escaped into a world of make-believe to keep his mind occupied. Taking up drawing as a hobby, he took to sketching fairies – an ethereal fantasy that was a far cry from the dark underground world of mining.

His sketches eventually turned into a storybook. By 30, he'd finished all three volumes of The Iron Fairies, which led to a line of physical Iron Fairies decorative items, a store in New York, and a factory in Bangkok.

His fantastical creations include the iconic The iron Fairies, J.Boroski, Maggie Choo's Bar, Sing Sing Theater, The Bookshop Bar, Bangkok Betty and many more. In 2014, Sutton opened his very own bar, A R Sutton Engineers Siam, where he founded his own gin distillery, now producing small batches of Iron Ball Gin. This is how his mind works: he visualizes a world that doesn't exist in reality and then brings it to life.
