Experience a wholesome collaboration as Chef Ruan Miguel and Chef Amaru Morales come together to create a menu infused with authenticity and the rich culinary heritage of their homelands.

For one night only on Thursday, 27 March 2025, diners can enjoy a blend of Brazilian and Chilean flavours in a casual, welcoming setting. Priced at HK$248 per person, choose or mix-and-match four dishes from the Brazil and Chile menus and a refreshing welcome cocktail paired with a mix of Latin spirits, topped with passion fruit, pineapple juice, and a touch of bitters. Brazilian Flavours by Chef Ruan Miguel

At just 34 years old, Chef Ruan Miguel has over 14 years of culinary expertise. Originally from Mato Grosso, Brazil, Ruan’s cooking reflects the fusion of indigenous, European, and African influences from his roots. Having moved to Hong Kong 5 years ago, Chef Ruan has become an integral part of Deadly Rabbits Concepts, contributing to the multiple location openings of Ask for Alonzo in the past few years.

For this dinner, he has crafted five dishes inspired by the vibrant ingredients and flavours of Brazil’s North and Northeast regions, including ingredients from the Amazon.

Menu Highlights:

Coxinha & Dadinhos de Tapioca – The ultimate Brazilian comfort food duo. The Coxinha is a golden teardrop-shaped croquette stuffed with seasoned shredded chicken and cheese. Paired with Dadinhos de Tapioca, crispy tapioca cheese squares are soft and gooey inside.

Bobó de Camarão – A rich shrimp chowder made with creamy cassava purée, red palm oil, coconut, and herbs, offering a tropical burst of flavours.

Moqueca de Peixe – A classic Brazilian seafood stew featuring pan-fried white fish in a fragrant mix of tomatoes, garlic, and red palm oil.

Escondidinho de Carne Seca – Layers of cured beef and creamy cassava purée, topped with melted cheese for a savoury, indulgent treat.

Ambrosia Doce de Leite – A traditional Brazilian dessert combining eggs, sugar, and cinnamon into a custard-like sweet perfection.


Chilean Flavours by Chef Amaru Morales

Born in Ecuador and raised in Chile, Chef Amaru Morales brings a rich Latin American heritage to the kitchen. After honing his skills in Vancouver, Canada, and refining French culinary techniques in Hong Kong, Chef Amaru now leads the culinary team at Qué Pasa, specialising in honest Spanish cuisine paired with bold Latin American flavours.

For the Four-Hands Dinner, Chef Amaru simplifies his favourite Chilean dishes to honour the quality of the freshest seafood and meats.

Menu Highlights:

Ceviche Costeño – A refreshing dish of marinated seabass served with yam potato, toasted corn, and red onion.

Humita Pino – Savoury corn purée topped with beef, black olives, and egg, finished with pebre sauce.

Papas Huancaína – Baby potatoes drizzled with a creamy cheese and nut sauce for a decadent flavour.

Conchas a la Parmesana – Baked scallops marinated in lemon butter and white wine, topped with melted parmesan.

Empanada de Mariscos – Crispy seafood and cheese empanadas served with tangy chimichurri.
