Mother’s Day Brunch Taps into Chef’s Childhood Nostalgia at Uma Nota




The Mother’s Day brunch menu with free-flow options at Uma Nota is available on Sunday, 12th May 2024, from 12 pm to 4 pm. Priced at HK$420 per person, it includes a selection of sharing starters, a choice of main course per person, and one sharing dessert platter.
Uma Nota’s array of unique São Paulo flavours is inspired by the long heritage of Japanese migration to Brazil, laced with timeless and contemporary Japanese cooking techniques. For this special Mother's Day brunch, guests can look forward to a selection of innovative creations by Brazilian Sous Chef Caroline Francelino de Souza. These dishes are a reflection of Chef Caroline's cherished childhood memories of her family's cooking, adding a personal touch to the menu.
“In celebration of Mother's Day, I have curated a selection of recipes that pay homage to the cherished ingredients of my childhood memories. Although my mother's background is of Italian descent, I wanted to infuse elements of Brazilian heritage into the menu. To start, I have chosen to create Kama Kani sushi roll, inspired by my mother's delicious Kani salad, which I adore. For the main course, I have decided to incorporate couscous as a nod to my paternal grandmother, who hails from the northeastern region of Brazil, where couscous is a staple. Lastly, dessert will feature a fun presentation reminiscent of the extravagant sweets enjoyed during our traditional Sunday family gatherings in Brazil. This decadent treat will be created table-side, providing an interactive dining experience for our guests,” said Chef Caroline.
Following the brunch, these dishes will be added to Uma Nota's a la carte menu, offering guests the opportunity to experience a taste of Chef Caroline's culinary heritage.
This sumptuous brunch offering commences with an assortment of flavourful sharing starters, including the fresh Hamachi Ceviche, the raw Hamachi is sliced and dressed with refreshing and citrus shishito-jalapeño tiger milk, coriander oil, “tobiko” fish roe and tapioca Furikake; Karaage Pirikara, the Japanese-style crispy fried chicken is coated with a sweet and sour glaze made with Biquinho chilli, a popular Brazilian chilli that is sweet and mild in flavour; Dadinhos de Tapioca, the Brazilian tapioca and cheese dices are crispy on the outside and soft on the inside is served with sweet chilli sauce; and Uma Nota’s popular Coliflor Assado, the roasted whole cauliflower served on a bed of vegan-herbs mayonnaise; and Chef Caroline’s creation of Kani Roll with spicy mayonnaise, avocado and fresh radish.
Each guest will choose their own main course with the selection of Chef Caroline’s special tribute to her grandmother, Peixe Assado, the roasted white fish fillet in green miso marination served with couscous, fermented Brazilian cassava salad, cherry tomato confit and chimichurri; Berinjela, the whole baked eggplant topped with miso glaze, goat cheese, roasted cashew nuts and fresh greens; Costelinha de Porco com Abacaxi, slow-roasted baby back ribs glazed with pineapple barbeque sauce and served with pickled pineapple; File de Costela, the grass-fed ribeye steak is served with shiso chimichurri and farofa on the side; and Arroz de Frutos do Mar, grilled tiger prawns, octopus, and mussels served on top of a bed of fluffy Brazilian-style rice, and garnished with yuzu ponzu mayonnaise.
Finish with the enticing picture-perfect Coconut Pavé, an iconic Brazilian dessert that resembles a tiramisu. It consists of alternating layers of biscuits and condensed milk whipped sauce topped with tropical yellow fruits like pineapple, mango, and passionfruit, guaranteed to put a smile on everyone's dial.

A Home Away from Home Mother’s Day Brunch at BEDU




BEDU will present a special Mother’s Day brunch on Sunday, 12 May 2024, from 12 pm to 4 pm. The brunch is priced at HK$440 per person and includes a selection of sharing appetisers, a choice of one sharing main for every two guests, and one signature dessert.
As a young child, Chef Ahmadpour fondly reminisced about the weekends spent in the kitchen with his mother, Mahnaz, as she skilfully created mouth-watering dishes that filled their home with tantalising aromas. After years away from home, Chef Ahmadpour is excited to honour his mother's culinary legacy this Mother's Day with a selection of special dishes inspired by her recipes through the special Mother’s Day brunch menu.
This sumptuous brunch offering commences with an assortment of sharing cold and hot mezze, along with the piping hot and fluffy Homemade Flatbread, which goes tremendously well with the creamy Chickpea Hummus topped with olive oil and a hint of spices; seasonal Fresh Vegetables; and Chef Ahmadpour’s special creation, Spinach Labneh, which takes its inspiration from Turkish yoghurt spinach dip caçik; this tangy dairy spread is made by straining yoghurt to a creamy consistency and is garnished with spinach, mint, and toasted walnuts.
Family guests will then enjoy two hot mezze, including Maitake Mushroom topped with pine nuts salsa and mayo chilli, served on top of the gem lettuce, which is a delicious reimagining of his mother's hearty mushroom stew. Beef Manti, a classic Persian savoury dumpling, was another nostalgic inspiration from his mother’s tireless efforts in the kitchen. Filled with minced beef, these delectable dumplings are also elevated with Chef Ahmadpour's takes by adding the tangy garlic yoghurt and tomato sauce for a burst of spice kick to every bite.
For the sharing mains, choose from the Mahnaz’s Pan-fried Kingfish served with tabouli, sour labneh, basil oil, turmeric and pine nuts, which is Chef Ahmadpour and his family’s favourite dish from his mother’s recipe; Baked Eggplant, a dish inspired by the Persian Borani, a classic Persian yoghurt-based mashed eggplant dip. At BEDU, the halved eggplant is roasted until tender and served with curd sauce and garnished with crispy garlic and mint; Chicken Lari made with the grilled to perfection tender chicken thighs and served with carrot hummus and Chermoula chilli sauce for a touch of bright flavour from the fresh herbs, lemon, ginger, and red pepper flakes; or the succulent and fall apart Lamb Shank marinated in BEDU’s spices and served on the bed of Persian barberry rice made with basmati, barberries, spices, and nuts.
Finish with Chef Ahmadpour’s signature Baghlava Mille Feuille, flaky Baghlava (Baklava) pastry layered with vanilla ice cream, crushed walnuts and almonds, and finished with caramel drizzle to melt every mother’s heart away.

Meraki Hospitality Group is a Hong Kong-based company founded in 2018 by brother and sister duo Alexis & Laura Offe. Soon after, BEDU opened in 2018 on Gough Street, Central. The cosy Middle Eastern restaurant and bar showcases the region's diverse street food culture, local and seasonal produce in a modern twist, unique to Central Hong Kong.
The concepts are unpretentious, open-minded and lively, qualities which are reflected in their design, the food and drinks. Meraki is about uniting groups of like-minded people through a community of locals, travellers and the team.
