Available on Tuesday, 31 December 2024 and priced at HK$688 per person for the first seating at 6 pm and HK$788 per person for the second seating from 9 pm to late, the New Year’s Eve dinner menu designed by Executive Chef Gustavo Enrique Vargas Mora, promises to offer diners of all persuasions and appetites a combination of Japanese cooking techniques, authentic Brazilian ingredients and unique São Paulo flavours, ensuring guests will dine till their heart and stomach content.
This sumptuous New Year's Eve dinner offering commences with an assortment of “Petiscos” welcome small bites of Truffle Cheese Bun made with fermented tapioca flour, milk, parmesan and mozzarella cheese, and filled with truffle paste; Scallop Tartare with sea urchin, cucumber, Yuzu koshō, and shiso leaf; and Creamy Crab Toast topped with the luxurious Oscietra caviar.
Guests will then indulge in two sharing starters, which include Hamachi Crudo, raw Hamachi sashimi served with coconut and ginger tiger milk, avocado cream, and kombu oil, and Lobster Tortellini served with a classic creamy Moqueca sauce made with bell peppers, tomatoes, onions, garlic, lime, coriander, coconut milk, and dendê oil.
Guests can choose their main course from Pan-fried Barramundi served with green miso cream and banana farofa; Grilled Grass-fed Tenderloin with cassava foam, port wine sauce, and crispy kale on the side; or Char-grilled Spanish Octopus served with rice, yuzu aioli, and a zesty vinaigrette sauce.
Ended the fabulous dinner with Champagne Sabayon, a luscious creamy sabayon cream served with lemon sponge cake, peach and black tea ice cream.
