Thai Chefs Unite in Their Passion for Authentic Thai Flavours for Hong Kong Palates

Ruên is the brainchild of Baljoet, who was born and raised in Hong Kong and has cultivated a profound appreciation for the vibrant dining scene that shaped his upbringing. Inspired by a family dedicated to the restaurant industry, he was attracted to the passion and hard work that define the culinary world. Although he earned a Master's degree in analytics from Hong Kong Polytechnic University, Baljoet's path seemed to lead toward a career in finance—a journey encouraged by his family. However, the call of the restaurant industry proved irresistible. After gaining invaluable experience in the tech department of the renowned Hong Kong Jockey Club and a financial planning role at Dah Chong Hong, he realised that his true passion lay in creating memorable dining experiences.

Thai cuisine, in particular, captured Baljoet's heart. Fascinated by the distinct differences between Thai and Indian curries during his youth, he recognised a growing love for Thai food among Hongkongers. This insight ignited his desire to share the rich flavours of Thailand with the city's diverse culinary landscape. As a result, he embarked on a journey to realise his dream and opened Ruên, his first restaurant that embodies a commitment to authentic Thai comfort food.

At the helm of the bustling kitchen are two talented Thai chefs who bring a wealth of experience in Thai cooking to the restaurant. Executive Chef Bill, born and raised in Bangkok, began his culinary journey at a young age by helping his mother run a street food stall. After moving to Hong Kong, he has amassed over 30 years of experience in esteemed Thai restaurants, including Greyhound Café, and Mango Tree, specialising in Bangkok cuisine and infusing traditional dishes with his unique flair and deep understanding of Hong Kong’s palates.

Head Chef Aom, who has lived in Hong Kong for nearly two decades, has honed her skills in various popular Thai restaurants throughout the city, notably serving as head chef at Nara Thai. Together, Chef Bill and Chef Aom have formed a dynamic culinary partnership at Ruên, blending their extensive experience and deep-rooted knowledge of Thai cuisine. Their ability to communicate fluently in Cantonese adds a unique touch to the restaurant, bridging cultural gaps and enhancing the dining experience for guests.

The bistro-inspired design features a striking, extended curved panel ceiling in red, seamlessly integrated with rattan detailing, and paired with comfortable banquette seating in forest green and elegant green marble tabletops. Grapor Pla Nhue Poo (HK$128): Inspired by Cantonese fish maw soup, this Thai-Chinese silky fish maw soup is made with pork bone broth, filled with tender crab claw meat and shiitake mushrooms, seasoned with fish sauce, and served with vinegar and bean sprouts.

Larb Pla (HK$128): Traditionally, “Larb” dishes are served with pork, chicken, or beef wrapped in lettuce. Ruên’s unique take features steamed fresh Barramundi, known for its sweet and delicate texture, mixed with fresh chilli and garlic, and served with toasted garlic bread.
