Maggie Choo’s, Hong Kong’s most theatrically compelling nightlife destination, marks a significant milestone this June as it prepares to celebrate its third anniversary. To honour the occasion, the bar is launching an entirely new cocktail menu — ten original creations developed under the direction of newly appointed head of the cocktail programme, Abim Malla.
The new cocktails signal a decisive shift in ambition: cocktails at Maggie Choo’s are now, unequivocally, a serious matter. The collection is rooted in the bar’s founding narrative, drawing on the intrigue of the 1920s, the east-meets-west cultural exchange of the era, and the romance of travel; each cocktail tells a story.
Spanning spirits and styles, the menu ranges from prohibition-inspired concoctions with Asian ingredients to tiki-inflected tropical builds — united by vibrant colour, clean execution, and a flavour range that runs from zesty and sweet to floral, smoky, umami-forward, and bracingly sour. Just as Maggie Choo’s weekly cabaret show 4.0 has raised the bar for the venue’s entertainment offering, the cocktail programme now follows suit — guaranteeing to leave guests awe-struck from the palate, and making Maggie Choo’s an ideal post-work destination on any given evening, where these in-depth cocktails can be savoured alongside the daily rotation of live band performances from 8 pm onwards.
The New Cocktail Menu - all cocktails are priced at HK$168 each

Maggie’s Martini - Gin, English Breakfast, Peach, Lemon, Milk Punch
A modern riff on the classic Milk Punch — itself a centuries-old technique for producing brilliantly clear, silky cocktails — Maggie’s Martini is a tea-based clarified milk punch made with gin, English breakfast tea, white peach, lemon, and sugar, strained to translucent perfection over several hours. A quietly dramatic entry point to the menu, with a flavour profile that is fruity, earthy, and gently floral, and a soft sweetness that belies its considerable elegance.
Driven by Her Dreams - Tequila, Sichuan Pepper, Chilli, Coriander, White Wine Vinegar, Agave, Tajín
A fearless reinterpretation of the classic Spicy Margarita, Driven by Her Dreams takes the bold architecture of that beloved template and rebuilds it entirely around Sichuan flavour. Tequila is sous-vide-infused with Sichuan peppercorns, chilli, and coriander before being combined with white wine vinegar and agave; the glass is rimmed with Tajín for its characteristic citric heat. The outcome is spicy, sour, salty, and deeply earthy.
Inheriting Only - Vodka, Strawberry, Taylor Port, Lemon, Ginger Beer
Conceived as a Shanghai-era twist on the Buck — a classic long drink built on spirit, citrus, and fizzy ginger beer. Inheriting Only layers of homemade strawberry syrup with Taylor Port, fresh lemon juice, and a generous pour of ginger beer. Refreshing, floral, and gently sweet with a lifted ginger finish, it is the most approachable drink on the menu and likely to become a signature.
Shanghai Express - Bourbon, Espresso, Strawberry, White Cacao, Lemon, Milk Punch
Named for the legendary express train connecting Shanghai to the wider world, Shanghai Express applies the milk punch clarification technique to a richly layered base of sous-vide bourbon, cold espresso, strawberry purée, white cacao, and lemon. The drink arrives in a faceted rocks glass, sealed with a toasted rice cracker — a nod to Shanghainese snack culture. The flavour profile is smooth, fruity, and chocolatey with a lingering mouthfeel.
Gold Shop - Amaretto, Vanilla, Vodka, Espresso, Salt
An elevated riff on the Espresso Martini — Gold Shop replaces the conventional sugar syrup with amaretto for a rich almond character, adds vanilla-infused vodka, and finishes with a measured pinch of salt and a dusting of cocoa powder. The result is served in a tall coupé with a deep brown foam crown divided neatly into two tones. Rich, creamy, salty, and nutty, it rewards those who linger over it.

Her Aspiration - White Rum, Mango, Kaffir Lime Leaf, Yuzu, Lemon
A returning favourite from the previous menu, reimagined with greater structural rigour and a tiki spirit, Her Aspiration blends white rum with mango purée, fresh yuzu, lemon, and kaffir lime leaf — finished with a touch of salt — for a cocktail of vivid tropical colour and complexity. Served tall with edible flowers, it delivers a tropical, citrus-forward, and vibrant flavour profile that provides an immediate sense of warmth and ease.
Remains of Mystery - Gin, Umeshu, Plum, Lemon, Cinnamon
Presented with a table-side smoke effect, Remains of Mystery is the menu’s most theatrical and most complex creation. Inspired by the Japanese plum wine tradition and twisted through the lens of a Whisky Sour, it combines gin, umeshu, house-made plum syrup, and lemon, and is finished with freshly grated cinnamon over aromatic smoke. Served in an ornate Chinese ceramic cup, it is rich, tart, acidic, and sour — a drink for those who seek depth behind the spectacle.
High Society - Bourbon, Truffle & Bacon, Amaro Montenegro, Umami Bitters
The most spirit-forward creation on the menu, High Society draws its inspiration from the Old Fashioned — the archetype of the stirred, spirit-led cocktail — while pushing decisively into savoury territory. Bourbon is fat-washed overnight with truffle paste and bacon, then combined with Amaro Montenegro and house umami bitters and served on the rocks with a garnish of Luxardo cherries. The flavour is savoury, bittersweet, and unmistakably spirit-forward.
Visitor from the West - Whiskey, Orgeat, Ginger, Cinnamon, Lemon, Angostura Bitters, Pineapple
A riff on the Whiskey Sour that introduces tropical and spiced elements, Visitor from the West combines whiskey with pineapple juice, fresh ginger, orgeat, cinnamon, lemon, and a dash of Angostura Bitters for a cocktail that is sour, spiced, rich, and bright in equal measure. Served in a rocks glass with a cucumber wheel dusted in spices, it captures the collision of Eastern and Western flavour sensibilities that defines Maggie Choo’s story.
Lost in a City - White Rum, Mancino Bianco Vermouth, Mint & Lime Cordial, Soda Water
A thoughtful evolution of the Mojito — arguably the world’s most universally loved long drink — Lost in a City replaces muddled mint and lime with a house-made mint and lime cordial crafted by blanching fresh mint in hot water, blending with melon acid and lime zest sugar, and filtering through a coffee filter for exceptional clarity. Combined with white rum, Mancino Bianco vermouth, and soda water, it arrives in a copper mule mug with a generous bouquet of fresh mint. Refreshing, minty, fizzy, and aromatic, it is the perfect companion to the warm evenings that June in Hong Kong demands.
The Team Behind The Menu
The new cocktail programme is the work of Abim Malla, Maggie Choo’s newly appointed Head of Cocktail Programme, whose arrival signals a clear statement of intent from the bar’s management.
Nepalese bartender based in Hong Kong, Abim has been working in the industry since 2017, starting his journey at Wyndham Street’s iconic Solas bar, where he found his true vocation behind the cocktail counter. He began his bartending career at Frites Hong Kong, where a thorough grounding in beer gave him an early appreciation for fermentation and flavour complexity. He then spent nearly five years with the Blacksheep Restaurants, working across a portfolio of celebrated venues — including Carbone and Buenos Aires Polo Club — where he developed and ran martini and whisky-focused menus that earned him a reputation as a passionate craftsman with genuine intellectual curiosity about the relationship between spirit and palate.
Knowledgeable across categories and particularly articulate on spirits and the art form of classic cocktails, Abim is renowned for hosting in-depth cocktail workshops and enjoys exchanging ideas with guests and fellow enthusiasts alike. His brief at Maggie Choo’s is to bring the same level of rigour and innovation that its cabaret programme now commands to every drink that leaves the bar.
Becoming Her — The Fourth-Season Cabaret Show Runs Every Thursday Night

Complementing the new cocktail programme and arriving as part of the same anniversary moment, Maggie Choo’s is equally proud to announce the launch of its fourth-season headline production, “Becoming Her”, which will commence in May 2026 and run every Thursday from 9:30 pm until midnight. About Maggie Choo’s
Maggie Choo’s is the creative vision of award-winning architect and design maverick Ashley Sutton, whose portfolio includes Iron Fairies, Ophelia, Dragonfly, and The Mixing Room. The bar is set within the narrative of Maggie Choo — an orphaned girl who inherited her war-torn family’s antique shop and discovered, behind it, an abandoned bank vault built by the East India Company in 1847, transformed into a secret cabaret destination of intoxicating glamour. Dressed in leather, imported teak, and copper, and animated by an antique-style bank vault door, ornate colonial plasterwork, vintage safe deposit boxes, and a grand piano, the space is at once historical and theatrical, intimate and spectacular.
