The name itself captures the restaurant’s spirit: “Fugazzi” is inspired by “Fuga,” the Italian word for escape, and “Gazzi,” a playful, invented slang riffing on “all’aperto” — Italian for the great outdoors. Each oven is individually constructed in Naples using centuries-old Neapolitan techniques, featuring a refractory brick dome and a renowned Sorrentino biscotto cooking surface, the latter prized for its ability to regulate heat and draw excess moisture from the dough, yielding a perfectly crisp base. Capable of reaching temperatures up to 500°C, the oven delivers the fierce, radiant heat essential to authentic Neapolitan pizza-making.

The dough is made with 00 Italian flour, combined with ice-cold water at 4 degrees Celsius and cold-fermented for a full 24 hours — a slow, careful process that develops complex flavour, improves digestibility, and produces the characteristic lightness of true Neapolitan pizza. Baked at 350°C for under two minutes in the Stefano Ferrara oven, each pizza presents a beautifully blistered, crispy outer crust and a soft, slightly chewy interior — finished with fine Italian olive oil and the finest fresh toppings.
